Watermelon shows up all summer at barbecues, pool parties, and picnics, but rarely in a drink. This is a different take on a favorite summer fruit. Combined with rum, lime, and mint, it's sweet and refreshing.
- Juice of 1 lime
- 4 mint leaves (plus extra for garnish)
- 2oz light rum
- 4oz watermelon juice
- 3/4oz maple syrup
For the watermelon juice
Cut up watermelon away from rind and place in blender. Don't be too concerned about white seeds, but remove any black seeds. Blend until liquified. Strain through a fine mesh strainer to remove any thicker chunks or seeds.
For the Grog
Combine all ingredients into a cocktail shaker. Add ice, and shake until pint glass becomes frosty and cold. Strain into a new glass with ice. Garnish with a mint sprig.
For a less sweet version, try it with gin!
